Unfortunately, not anyone can clean a Restaurant Kitchen Exhaust Hood system. Restaurant owners can’t even clean it. It must be done according to NFPA Code 96 standards which specify that it must be done by a trained, qualified and certified person acceptable to the authority having jurisdiction.
This kind of work cannot be done by hand or with small tools and ordinary chemicals…It requires specific tools and equipment and strong chemicals, otherwise the work will not be done right; you can set off the fire suppression system or be unable to clean the vertical and horizontal ducts of most hood systems.
You have to be trained and certified and understand the NFPA Code 96 in order to be sure that there are no fire hazards.

Any commercial kitchen is required by law to be inspected by Fire Inspectors, and all Fire Inspectors require licensed technicians for NFPA compliance. Included (but not limited to) are:

To maintain a clean and safe kitchen, it’s recommended to clean your exhaust system at least twice a year. This frequency is in line with NFPA regulations for most restaurants.
According to NFPA Code 12.7.2, cooking equipment that collects grease below the surface, behind the equipment or in cooking equipment flue gas exhaust, shall be inspected and, if found with grease accumulation, cleaned by a properly trained, qualified and certified person acceptable to the authority having jurisdiction (AHJ).
